Our famous "Pain au Chocolat" is basically a semisweet chocolate "baton" which forms the basis for the traditional crusty and flakey shell. Without the chocolate center, you would simply be eating a croissant. Once the dough has gone through a lengthy lamination process (over the course of several days) the yeasted puff pastry dough is then wrapped around a stick of REAL chocolate and baked to perfection.
