Eclairs? Yes please! Our delicious éclairs are made from choux pastry, filled with creamy custard and hand dipped in rich dark chocolate.
The choux pastry (pâte à choux) is a key component of our delicious éclairs. This pastry rises only from the action of steam. We don't use any yeast, baking soda, or baking powder for leavening.
Our Eclairs are carefully made in small batches by heating milk, water, sugar, salt, and butter to a boil, stirring in bread flour until fully incorporated, allowing it to cool a little, then adding farm fresh eggs. The dough is then placed in a pastry bag and piped onto a baking sheet in the long shape. The result is an airy, almost hollow shell that is crisp enough on top to be dipped in the most delicious chocolate imaginable.
